Easy Banana Bread


Let’s begin the New Year with something really simple. Here’s my recipe for easy banana bread. One loaf was definitely not enough; this was gone way too soon 

Ingredients:
  • 3 ripe bananas, mashed
  • 2 cups flour
  • 2 eggs
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ cup vegetable oil
  • ½ cup chopped nuts (optional)
  • ½ tsp salt


Directions:

  1. Preheat oven to 350 degrees F
  2. In a large bowl, sift together flour, baking powder and salt.
  3. Add sugar, vegetable oil then stir in the eggs one at a time, beating well with each addition.
  4. Lastly stir in the mashed bananas and nuts and mix well.
  5. Transfer mixture to a lightly greased 9x5 inch loaf pan.
  6. Bake in preheated oven for 60 minutes or until a toothpick inserted into center of the loaf comes out clean.




Note: as an option, you may also add raisins
