Cole Slaw

This is coleslaw, Bahamian style and it is one of the easiest side dishes to prepare, yet it is flavorful and not to mention healthy, especially if low-fat mayo is used.  Here is a basic/simple coleslaw recipe:










Ingredients:
  • 4 cups shredded cabbage
  • 1/4 cup grated carrots
  • 1/2 cup low-fat or regular mayonnaise
  • 1 tbsp apple cider vinegar (fresh lemon juice may be used instead)


Directions:
  1. In a large bowl, combine the cabbage and carrots and set aside.
  2. Mix mayo and vinegar in a separate bowl, then add to cabbage and carrots mixture; combine thoroughly. (Keep refrigerated)


There you have it, now wasn’t that quick and easy?

Tip: As I mentioned earlier, this is a basic coleslaw recipe, for those who prefer simplicity. However, for those of us who live life on the wild side, the following may be added:
  • red cabbage
  • fresh diced tomatoes
  • green bell pepper
  • raisins

All measurements may be decreased or increased to your personal specifications.
