Ingredients:
- 4 cups shredded cabbage
- 1/4 cup grated carrots
- 1/2 cup low-fat or regular mayonnaise
- 1 tbsp apple cider vinegar (fresh lemon juice may be used instead)
Directions:
- In a large bowl, combine the cabbage and carrots and set aside.
- Mix mayo and vinegar in a separate bowl, then add to cabbage and carrots mixture; combine thoroughly. (Keep refrigerated)
There you have it, now wasn’t that quick and easy?
Tip: As I mentioned earlier, this is a basic coleslaw recipe, for those who prefer simplicity. However, for those of us who live life on the wild side, the following may be added:
- red cabbage
- fresh diced tomatoes
- green bell pepper
- raisins
