Curry Chicken

This is curried chicken done my way. It consists of segmented chicken wings seasoned with curry powder, salt, black pepper, garlic and onion powders.

The chicken is placed in a medium pot, then a can of cream of chicken soup along with diced potatoes, carrots, chopped onions and sweet pepper are added. After thoroughly combining all of the ingredients, I proceed to cook the curry on medium to low heat for about an hour or until the chicken is tender and the sauce has thickened.  Serve over white rice, delicious!!

  2. I love your recipes. If you have recipes for Guava Duff and pork chops would you post them please. I understand that some of the peas N rice recipes I have witness call for beef bouillon is this traditional? Thanks

    1. Hello Galerude and thanks for stopping by. I have not posted my Guava Duff recipe as yet.but I will soon. In the meantime, here is one of my pork chops recipes: http://cookingwithsugar.blogspot.com/2013/02/baked-pork-chops-with-apricot-preserves.html

BTW, you may use beef bouillon in your peas and rice, I've done so a few times, but it is not really a Bahamian tradition. Thanks again, have a blessed day.

  3. Hi, thanks for posting so many great recipes. I just saw guava at the local supermarket, which is quite usual and was hoping to make duff. Do you have a recipe you can share? Thank you!!

    1. Hi Tina, thanks so much for your kind compliments :) I have done guava duff several times, but I never documented it, lol!! Now that you have inspired me, I certainly will. In the meantime, you could try this recipe that I found, sure hope it helps. Her duff is more sophisticated and professional, while mine is far less complicated and a bit rustic, but my hubby still loves it :)
